Plant in spring, dig in fall, a non-sweet parsnip-like root. This variety dates back to 1900 in our catalog, and the old variety of salsify was listed by us in the 1840’s. Young plants look like grass. In 1927 Burrell’s seed catalog stated the following, “Many prefer salsify to oysters. The soup from which gives off an odor exactly the same as oysters, and by some liked better than oyster soup.” Learn More
